Who would have thought you could have a delicious and mouth watering dessert with three types of milk - I certainly didn't!
  • 3 eggs, separated
  • 1 tbs vanilla extract
  • 200g golden caster sugar (see notes)
  • 1 cup (150g) self-raising flour, sifted
  • 1 tsp baking powder
  • ½ cup (125ml) evaporated milk
  • ½ cup (125ml) condensed milk
  • ½ cup (125ml) full-cream milk
  • 200ml thickened cream, whisked to soft peaks
  • Seasonal berries, to serve
  1. Preheat the oven to 150°C.
  2. Grease and line base and side of a 20cm springform cake pan.
  3. Using an electric mixer, whisk eggwhites on low speed for 1 minute or until frothy.
  4. Add egg yolks and beat on medium speed for 1 minute.
  5. Add vanilla and sugar, and beat for 1 minute.
  6. Add flour and baking powder, and beat for a further 1 minute or until just combined.
  7. Transfer batter to cake pan, gently smoothing surface, then bake for 35-40 minutes until golden. Cool cake in pan for 15-20 minutes, then turn out onto a serving plate with a rim.
  8. Meanwhile, combine the three milks in a jug, then slowly pour milk mixture over the cake, allowing it to soak in.
  9. Serve slices of cake topped with a dollop of whipped cream and seasonal berries.
  10. ENJOY!
